The pashmina of Champagnes from Winston Churchill’s favorite producer. A very cold cellar is partly responsible for the minuscule bubbles (a quality prized in Champagne) that drift up in gusts from the bottom of the flute. Champagne is, after all, a wine, but one with a magically alluring texture. It’s as if the taste of the wine--aristocratically dry and toasty--floats on those tiny bubbles. And floats you right into the new millennium.
